If you can't get white onion soup, use leek and potato or any mild white soup.
You can microwave the frozen vegetables if you have a microwave oven.
Cheese Potato Bake
For two to three people, you will need:

1 package white onion soup
1 cup skim milk
water according to package directions
1 1/2 cups grated cheddar cheese
250 grams (about 8 ounces) frozen mixed vegetables
1 can potatoes
1 packet potato chips, cheese and onion flavour

Heat the oven to 180C/350F.
Place the frozen mixed vegetables in an ovenproof dish. Cover with a little boiling water while you make the cheese sauce.
Make up the white onion soup according to the directions, except substitute one cup of milk for one of the cups of water. Cook for the required time. Stir in all except 1/4 cup of the cheddar cheese and heat until melted through.
Drain the water off the vegetables, which should be defrosted by now. Open the can of potatoes, drain off the liquid, and place the potatoes on top of the frozen mixed vegetables. Pour the cheese sauce over the potatoes. Crush the potato chips, and sprinkle on top of the cheese sauce. Then sprinkle the remaining cheese over the potato chips.
Bake in the oven for 15 to 20 minutes until heated through and the topping is crispy.
