| For two to three people, you will need:
2 cups cooked rice
1/4 cup frozen carrots
1/4 cup frozen peas
1 egg
salt and pepper to taste
2 teaspoons olive oil
Heat the oil in a good non-stick pan. Beat the egg while the pan heat. Add the vegetables to the pan, and cook until defrosted. Add the rice and heat through, stirring all the time. When the rice is good and hot, pour in the egg, stirring vigorously. The heat of the rice will cook the egg, and the rice will also clump together to make it easier to eat with chopsticks. Season to taste.
