Canned potatoes are actually very nice. I don't know why we don't use them more often. However, I'm sure that after trying this salad, they'll become a standard store cupboard item in your home too!
Quick potato salad
For two to three people, you will need:

1 can of potatoes (410 g or 14 oz)
1 hard boiled egg (if you make boiled eggs for breakfast, make an extra one for the salad)
2 tablespoons vinegar (white wine vinegar is nicest here)
3 tablespoons light mayonnaise
3 tablespoons plain low fat yoghurt
some paprika and fresh herbs to garnish

Open the can of potatoes, and drain off the liquid. Put the potatoes into a serving bowl. If they're a little big, chop them coarsely. Squash one or two to make the salad look really home made. Add the vinegar and a bit of salt to your taste. Mix the mayo and yoghurt then pour that over the salad. Toss well. Slice the egg lengthwise, then crosswise, and add to the potato salad. You can toss lightly if you like.Sprinkle with any fresh herbs you have, like parsley, rosemary, borage flowers, anything! Then sprinkle lightly with the paprika to give a little colour.
