Well, you have to be able to do
something with those
half tins of tomato! Adding fresh tomato to canned helps give a nice
fresh flavour.
Homemade Tomato
Sauce
For two to three people you will need
1 small tomato
1 clove garlic
200g/7oz canned tomatoes
1/2 teaspoon olive oil
fresh herbs
Pour boiling water over the tomato and leave for a minute or two.
Remove the tomato from the boiling water and pull off the skin. Chop
the tomato coarsely. Crush the garlic.
Heat the oil in a good non-stick pan. Add the garlic, the undrained
canned tomatoes and the fresh tomato. Bring to the boil, then turn the
heat right down and simmer for about 7 minutes. Stir in chopped fresh
herbs to taste, or a pinch of dried.
